Permaculture
Permaculture is a design philosophy and practice that draws on natural systems to create sustainable, regenerative human settlements. At inSpiral we are inspired by permaculture principles in everything from how we design our kitchen to how we think about our supply chain and community relationships.
The three core ethics of permaculture — earth care, people care and fair share — map almost exactly onto the values behind inSpiral. Everything we do is an attempt to live these ethics in a commercial, urban context.
Permaculture at inSpiral
- Roof garden — We are actively developing a growing space on and around the Lounge where food for the restaurant can be grown on-site
- Composting — All kitchen organic waste is composted
- Zero waste kitchen — We design our menu to use every part of each ingredient
- Community growing — We are part of the Capital Growth network and support local growing initiatives
- Local sourcing — We prioritise suppliers within the region wherever possible
